Taiwanese Beef Noodle Soup

Beef stew is one of my favorite foods, especially my mom’s caldo de res, that she frequently makes for me when I visit. When Kin (he’s looking for a UX design internship for this upcoming summer 2019. Feel free to check out his portfolio.) told me he wanted to make Taiwanese beef noodle soup, I was all for it, especially last Sunday when it was such a cold rainy day. We went to Safeway, bought all the ingredients and it was really fun and interesting to watch him make it. It was pretty easy and I’d like to learn to make it myself.

These are all the necessary ingredients:

Beef Shank

Bok choy

Spring onion

Chili garlic sauce

Fresh ginger

Fresh tomato

1 whole onion

1 whole head of garlic

Raw agave nectar (instead of sugar)

Aji-Mirin (Rice Alcohol)

Black pepper

Salt

Soy sauce

Olive oil

Kin first prepared all the vegetables, like pealing the onion and garlic, cutting the tomato and bok choy, prepared the meat, then he fried some of the ingredients with the meat, then put everything into the InstantPot.

Upon opening the InstantPot to reveal the soup. It smelled amazing. It took about an hour and 15 minutes.

These are the noodles, which Kin prepared along with the bok choy, last after the soup was done.

Yes, it tasted as good as it looks.
